Ike's Pikelet Breakfast Sandwich

We are having a very lazy weekend so far.  After sleeping in I decided to give Ike his choice of breakfast.  This is Ike's version of the McGriddle breakfast sandwich.  I made a recipe of Edmonds pikelets and poured enough batter to make them 3 1/2 inches across.  I decided that pikelets would better stand up to the job of 'bun' with a little more resilience than my buttermilk pancake recipe.  Once the pikelets were done.....we layered in a  microwave scrambled egg, a slice of 'plastic' cheese, and some fried summer sausage and breakfast was ready. It got two thumbs up from Ike....and was really quite quick.  Now that I have some left over pikelets in the right size....I might just have one for lunch:)  I hope your weekend is a lazy one as well!
